Menu Planning and Food Prep

 

Happy Sunday everyone!

I hope that you’ve been having a great weekend. We were expecting a break from the heat and humidity but unfortunately, that didn’t happen. When I stepped out of my door Saturday morning for my run, I believe that it was 100% humidity. Fun. At least, I had this new fun toy to play with.

Polar RC3 GPS

It’s the Polar RC3 GPS and has both a heart rate monitor and GPS. I’m super curious about learning more about my heart rate training, especially after reading about Miss Zippy’s experience with MAF training this summer. I know that I probably run too hard on my runs in general (which isn’t all that fast for you runners out there) and I know that’s not a good thing in the long-term. It will be interesting to get real-time feedback on my heart rate.

I received the RC3 GPS through my affiliation with Fitfluential to test out and review. I plan on testing it out for the next couple of weeks and will have a full review around the end of the month.

By the way, I ran an easy 4 miles Saturday and it went well. No signs of asthma.

Since it’s been so hot and humid around here, I haven’t been super inspired to cook. Plus, we didn’t do a proper grocery shop last week so we scrounged around to make do with what we had. But in reality? All I really want to eat is ice cream but I wish that I could eat it as well as Everett.

But we finally made it to the grocery store and was inspired. I found myself with a few spare hours yesterday and managed to prep some food for the week – a big batch of quinoa for salads and for a batch of quinoa pancakes, cut up fresh fruit, plantain bread and green apple and coconut 2-bite treats (cannot wait to try these!).

I also tried to make my first batch of cold brew coffee. I drink way too much iced coffee that I figured that I should try to make it myself. Fingers crossed it turns out!

Here’s my menu for the week:

Sunday: Italian-style Halibut

Monday: Salmon Quinoa Salad

Tuesday: Spaghetti Squash Pie with no meat

Wednesday: Left-overs

Thursday: Dinner out and drinks with friends

Friday: Dinner out / Order in

Saturday: Salmon with mango salsa

    That Italian style halibut looks delicious!!!
    Love the picture of your little one enjoying his ice cream!
    I can’t wait to read your review on your new heart rate monitor!! I’ve been following Miss Zippy’s MAF training, too and am tempted to give it a try (just not sure I have enough self-discipline!).

    Love the pic of E! Today we’re trying out new taco recipe in crockpot. Hope it’s a winner! Leftovers on Monday. Running a nite race on Tuesday & then the rest of week is a mystery. Meal planning & the kitchen in general are not my domain. Thank goodness my hubby is great cook!

      The fact that it’s both a HRM and GPS is very exciting. It’s been fun to play around with so far. I made your spaghetti squash pie once before and my husband literally ate the whole thing. This time I’m hoarding some for myself first!

      oh my goodness it’s going to take a lot of self-discipline to run at the correct heart rate! At least having the HRM on my wrist is consciously forcing me to slow down but still. Can’t wait to hear about your MAF test and experience!

    Well hey – no signs of asthma in this ridiculous weather?! Amazing! We were at the Cape and it was nice although overcast on Saturday and miserably humid on Sunday. I too wish I could eat ice cream like Everett. I bet if we tried, we could achieve that. My stomach is growling at the Salmon Quinoa Salad, though. I guess I’ve grown up a bit if that looks better than ice cream to me.
